After the pumpkin patch and carving up pumpkins, what do you do with your leftovers? Don’t waste them! Make your own pumpkin latte purée and give it away as a gift! This is quite a process but so worth it! Are you ready to make your own pumpkin latte that you’ll be craving all winter long?
If you are using your pumpkin for carving remember to save the insides to make the puree. If you are buying a pumpkin to cook and not carve, then just cut your pumpkin into chunks and cut off the skin of the pumpkin. After that, take your left over pumpkin insides and chunks, and separate the seeds from the flesh parts of the pumpkin. You don’t want any of the skin of the pumpkin so make sure you cut that part off and throw away, or use in a compost bin for gardening.
When we carved our pumpkin, we purposely carved more of the flesh of the pumpkin so we could make more purée, and we also roasted our seeds with some salt that makes a great snack. Once you have your pumpkin ready, place on a cookie sheet and bake the chunks for 40-45 minutes, or until the chunks are tender and easy to poke with a fork at 350 degrees.
Take the chunks of you pumpkin and toss them into a food processor until all the big chunks are gone. If you have a lot of pumpkin to blend in the processor you might need a few rounds to get it all blended. You might need to add a bit of water if your pumpkin is too dry. We got about 2 cups worth of pumpkin after carving it. So now you’ve make pumpkin purée! Now here’s the fun part. We are going to make your plain old pumpkin into a delicious addition to your latte..
Here is the recipe to make one jar of pumpkin latte purée:
pumpkin latte purée
1 cup pumpkin purée
1 cup brown sugar (you can use white sugar too)
2 TSP of pumpkin pie spice
2 TSP of cinnamon
2 1/2 TBS Of vanilla extract
For additional sweetness and flavor you can add a TSP anise seed extract.
Mix all the ingredients together and place in a jar. Now you have your pumpkin latte purée! You can store it in your fridge or give it away as a gift. Write on a card the recipe for a homemade pumpkin latte and let your friends enjoy a taste of autumn.

2 TBS of pumpkin latte purée
1 cup of steamed milk
1/2 cup of strong brewed coffee
Add a bit of cinnamon to the top or some whip cream!
